AMP UP YOUR AVOCADO TOAST

Who doesn’t love a good piece of avocado toast to start the morning off right? Or maybe for a quick, easy, and tasty lunch? Heck, some of us (me, perhaps) love the stuff so much that we may even make it for dinner on occasion. When all else fails, we know that we can always turn to our faithful friend the avocado, mashed up atop a perfectly-toasted slice of bread. Being the avo toast addict that I am, I’ve come up with several variations over time to keep things interesting. Some of my favorites are below.

Lox Avo Toast

Ingredients:
-2 tsp. mayonnaise (I prefer Nayonnaise)
-Lox salmon
-Bread of choice (I chose Ezekiel)
-Half an avocado, mashed
-Salt + pepper, to taste
-Red onion
-Capers

Instructions: Toast bread and spread mayo Nayo on top. In small bowl, mash together avocado with salt and pepper to taste and layer onto a slice of bread. Top avocado with lox, red onion slices, and capers. Insert tongue emoji here!

Tomato Basil Bruschetta Avo Toast

Ingredients:
-Bread of choice (I chose gluten-free)
-Half an avocado, mashed
-Salt + pepper, to taste
-Cherry tomatoes
-Fresh garlic, minced
-Fresh basil
-Olive oil
-Balsamic vinegar

Instructions: Slice cherry tomatoes. Mix tomatoes, mined garlic, chopped basil, olive oil, and vinegar together in a bowl. Set aside. Toast your bread. Top toasted bread with mashed avocado, salt, and pepper. Pile tomato mixture on top and enjoy!

Almond Butter + Sea Salt Avo Toast:

Ingredients:
-Almond butter
-Bread of choice (I chose Ezekiel)
-Half an avocado, sliced
-Olive oil
-Sea salt

Instructions: Slather a piece of freshly-toasted bread with almond butter. Layer with avocado slices, sea salt, and a drizzle of EVOO. This is one of my faves!

Avo5_BleubirdBacon + Gorgonzola Avo Toast

Ingredients:
-2 tsp. mayonnaise (I prefer Nayonnaise)
-Bread of choice (I chose Ezekiel)
-Half an avocado, sliced
-Salt + pepper, to taste
-Gorgonzola cheese
-Bacon

Instructions: Apply a thin layer of mayo Nayo to a piece of toasted bread. Place avocado slices on top. Sprinkle bacon pieces and gorgonzola cheese crumbles to your liking. Don’t forget to garnish with salt and pepper!

Classic Lemon + Chili Flake Avo Toast

Ingredients:
-2 tsp. mayonnaise (I prefer Nayonnaise)
-Bread of choice (I chose gluten-free)
-Half an avocado, sliced
-Sea salt and pepper, to taste
-A squeeze of lemon
-Red chili flakes
-Hot sauce

Instructions: Toast bread and use mayo Nayo and avocado slices as your base. Add salt, pepper, and red chili flakes. Squeeze lemon juice on top for a tangy flavor. Add a few shakes of hot sauce if desired.

Cumin Avo Toast with Arugula and a Fried Egg

Ingredients:
-2 tsp. mayonnaise (I prefer Nayonnaise)
-Bread of choice (I chose Ezekiel)
-Half an avocado, mashed
-A good squeeze of lemon juice
-2 tsp cumin
-Salt + pepper, to taste
-Fried egg to your liking
-Arugula

Instructions: Toast your bread and spread on some mayo Nayo. Mash up half an avocado and mix in lemon juice, cumin, salt, and pepper. Spread avocado mixture on top of bread, and top with a bed of arugula and a perfectly-fried egg. Bam!

    Well these are inspirational so thank you, the almond butter one is intriguing!
    I love mine quite simple with gomazio and chili flakes or I also love some dressed arugula and shaved parmesan.

    These variations sound super tasty! I also love to saute some sliced strawberries with balsalmic and olive oil and toss them over chopped avo with a sprinkle of grated parm. The savory-sweet confusion is delicious.. ;)

    I love a sprinkle of nutritional yeast on top of the traditional avo toast — it adds a nutty flavor similar to Parmesan and is really good for you!

    The avocado seems to be loved by everybody in this world!! haha
    I love it to but I quickly get tired of it, I don’t know why… perhaps it feels heavy.
    However, this post look really delicious and really attractive. Im sure you enjoy doing it, and of course, eating it!

    The toast with almond butter sound interesting -I have never try almond butter.
    The toast with salmon is probably my favourite combination but the one with bruschetta is the kind of thing that never ever is a fail.

    I love to combine avocado with shrimps and lamb’s lettuce.

    Oh yum! My morning breakfast is usually Dave’s Killer bread topped with tomato paste, mashed avocado, lime, red pepper flakes and jalepeño. Nothing fancy. I might need to branch out a bit.

    One of the biggest drawbacks of being pregnant, besides lack of sushi, is the fact that I can’t have lox either! But I’ll definitely tuck this away and bust it out in a few months, the thought of avo and lox together sounds amazing!
